If you’ve been around the Internet any time recently, you’ve probably heard of two-ingredient cookies. It’s simple. Smash two bananas, mix in a cup of oats, and bake at 350 for 15 minutes. That’s it. So simple, really tasty, and about a billion percent healthier than regular cookies!
But today for Holidays Made Easy (and what’s easier than these cookies? Nothing.), I am sharing two of my favorite additions to these cookies.
For both recipes, I throw in a teaspoon of cinnamon. I think it adds just a little bit more flavor and depth to the cookies.
Then before I stick them in the oven, I press one of the following into the top of each cookie:
1/2 a caramel
Four butterscotch chips
Then bake as above. Yes, it’s that simple.
Now there is a reason why I have two favorites. If I’m going to chow down on these little cookies right away, I prefer the caramel. Ooey and gooey, they are the perfect topping right out of the oven.
But if they are going to go in my lunches for a few days, I like the butterscotch more. The caramel hardens a bit and becomes tough after a while (delicious, but tough). The butterscotch cookies are much easier to eat on the second day.
That is, if they make it that far!
