Chicken Orzo Soup
Chicken orzo soup is a delicious way to use up leftover chicken (or turkey!). It’s the perfect easy weeknight meal that the whole family will love.
In a large pot, sauté the onion, celery, carrot, and mushrooms in the butter until slightly tender.
Add the rest of the ingredients and bring to a boil. Boil for 10 minutes or until orzo is soft.
Top with more fresh thyme.
I made this recipe with leftover shredded chicken, but it’s just as good with turkey. It’s my go-to dish after Thanksgiving.
