One of my favorite parts of winter is soup! I love all sorts of soup, but this is one dish that I’ve come back to over and over again. The other day I made shredded chicken in my Instant Pot (holy moly I love that thing) for enchiladas, and had some leftover so I whipped up a batch of this chicken orzo soup.
This is a really versatile soup — don’t like mushrooms? Leave them out! Prefer rosemary to thyme? Make the switch. Have a different kind of pasta on hand but no orzo? Pretty much any smaller noodle will work just fine.
This is also the perfect after-Thanksgiving recipe — I think I’ve made it with leftover turkey for the last six years! My family loves it — I cut the veggies fairly chunky and my toddlers eat them right up.
